We are searching for an accomplished and discreet Head Waiter, to ensure that every detail of the guest experience reflects the Amorim Luxury Group's commitment to excellence.
- Operational Execution & Prep Ensure the entire dining area and service stations (mise en place) are perfectly set up, stocked, and ready before the start of every service period, adhering to precise luxury standards.
- Shift Leadership & Guidance Lead, motivate, and oversee the service staff (Waiters, Runners, etc.) during the shift, allocating duties, monitoring performance, and ensuring the team maintains energy and focus.
- Service Standards Enforcement Directly enforce world-class service procedures and refined dining room etiquette, ensuring every staff member executes table service, plating, and beverage service impeccably.
- Guest Interaction & Experience Act as the primary point of contact for guests on the floor; interact proactively, manage special requests, and handle any minor issues or complaints immediately and with utmost discretion and professionalism.
- Communication & Synergy Maintain clear and continuous communication with the Kitchen (Expeditor) and Bar teams to manage pacing, coordinate food and beverage delivery, and ensure cohesive service flow.
- Inventory & Par Stock Monitor and manage the daily operating supplies (par stock) for the floor, including linens, silverware, glassware, and service consumables, reporting any shortages to management.
- Venue Presentation Continuously monitor the cleanliness, lighting, music, and overall ambiance of the dining floor throughout service, proactively making adjustments to maintain the immaculate and sophisticated atmosphere.
- Training & Mentorship Provide real-time coaching and constructive feedback to junior team members, ensuring continuous development in luxury service techniques and brand standards.
Profile and Requirements
We are seeking a highly polished professional with strong presence who thrives in a demanding, exclusive environment.

Experience: Minimum of 3–5 years of experience in a service leadership role (Senior Chef de Rang or Head Waiter) within a fine-dining restaurant, private club, or 5-star luxury hotel setting.

Service Leadership: Proven ability to supervise, motivate, and develop a service team on the floor during high-pressure situations.

Discretion & Etiquette: Exceptional interpersonal skills and a track record of handling clients and sensitive situations with absolute discretion.

F&B Expertise: Deep knowledge of fine dining service standards, wine service, and cocktail preparation.

Operational Management: Strong understanding of inventory, basic operational cost control, and resource allocation.

Language: Fluency in Portuguese and English is mandatory; proficiency in a third language (e.g., French, Spanish) is highly valued.
